Classic Ceviche

Ingredients

  • 2 lbs. fresh fish cut into 1/2″ pieces
  • 1/2 red onion, finely diced
  • 1 C chopped seeded tomatoes
  • 1 serrano chili pepper seeded, finely diced
  • 2 t salt
  • dash oregano
  • pinch cayenne
  • 1/2 C lemon juice
  • 1/2 C lemon juice
  • 1/2 C lime juice
  • serving options: cilantro, avocado and tortilla chips 

Instructions

Step 1

Combine all in a bowl, except juices. mix well. cover with juices.  Let sit covered in fridge for 1 hour. 

Step 2

Stir and let sit several hours until chilled through.  The longer you leave, the better the flavors will mix.

Step 3

optional: top with cilantro and avocado and serve with chips
